Galette. Rustic tart. Freeform pie. Call it what you want, and fill it with almost anything. Today we’re making a galette that’s equal parts sweet and tangy, full of caramelized onion and leeks, celery and – finally – topped with goat cheese. There’s a ton of variety in this one dish, so let’s get to it.
